A Perfect Meal

The precise table setting suggested Janet had hit the bullseye when she made dinner reservations at InComum by Luis Santos.  


We all had the prix fixe, five-course meal but skipped the wine pairing.

Green Peas Vichyssoise with Coriander Sorbet
Marinated Salmon w/ Avocado and Samphire
Sautéed Scallops on Carrot Mousseline w/ Turmeric
Janet gave me her leftover pork.  The hike down the mountain, and then up and down the hills to the restaurant makes a guy hungry, especially when the food is less filling than delicious.

Iberian Pork with Asparagus Risotto
Patrizia, our wonderful server, told us how to sequence elements of the unusual dessert for maximum sensory pleasure.  "Eat the cheese last."
